Basic Prep for Fresh Artichokes

It must be remembered that artichokes discolor rapidly once they are cut. to prevent this, before starting to prepare the artichokes, have ready a bowl of water acidulated with vinegar or lemon juice, about 3 tablespoons to 1 quart water. Drop artichokes into this water as soon as they are prepared and keep them in the water until cooking time. This will keep them light.
