Banana Bran Loaf

1 cup of mashed ripe bananas, about 2 large
1/2 cup of sugar
1/3 cup of liquid vegetable oil margarine
1/3 cup of skim milk
2 egg whites
1 1/4 cups of all purpose flour
1 cup of Oat Bran hot cereal, uncooked
2 teaspoons of baking powder
1/2 teaspoon of baking soda

Heat oven to 350ºF. Lightly spray 8 x 4 inch or 9 x 5 inch loaf pan with nonstick cooking spray, or oil lightly. Combine the bananas, sugar, margarine, milk, and egg whites, mix well. Add combined flour, oat bran, baking powder and baking soda, mix just until moistened. Pour into prepared pan. Bake 55 to 60 minutes or until a wooden toothpick inserted in the center comes out clean. Cool for 10 minutes in pan, remove to wire rack. Cool completely. Makes 16 servings
