Blueberry Bran Muffins

2 2/3 cups of all bran cereal
1 1/2 cups of skim milk
4 egg whites
1 tablespoon of vanilla
2 cups of flour
2/3 cup of brown sugar
2 tablespoons of baking powder
3/4 teaspoon of baking soda
1 1/2 teaspoons of cinnamon
2 cups of blueberries, fresh or frozen

Preheat your oven to 325ºF. Combine the bran cereal, milk, egg whites and vanilla, let it stand for 5 minutes. Stir together the flour, brown sugar, baking powder, baking soda and cinnamon in a large bowl. Add cereal-milk mixture and mix. Add blueberries and stir carefully. Spoon into lightly oiled or paper lined muffin tins. Bake for 30 minutes. Makes 16 muffins
