Basic White Sauce

2 tablespoons of  butter
2 tablespoons of flour
1 to 1 1/2 cups of milk
Salt to taste, if desired
Freshly ground white pepper to taste, optional, may use black

Melt the butter in a medium size saucepan. Add the flour and immediately start stirring with a wire whisk. Add the milk all at once, stirring rapidly with the whisk. Add the salt and pepper. Cook, stirring frequently, about 5 minutes. Makes 1 to 1  1/2 cups.

Basic White Sauce 2

1 cup of water
1/2 cup of instant non-fat dry milk
1 1/2 tablespoon of all-purpose flour
1/4 teaspoon of salt
Pinch of white pepper
3 drops butter flavoring

Combine first 3 ingredients in a heavy saucepan, stirring until smooth. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in remaining ingredients. Yield: 1 cup.
