Bologna & Noodle Soup RecipesABC 8/30/06

2 eggs, beaten
1 teaspoon of salt
1 1/3 cup of flour
1 pound of bologna, diced
1 medium onion, chopped
2 medium potatoes, chopped
salt and pepper to taste

Combine the eggs, salt and flour to make a stiff dough, knead on a floured board for 3 - 4 minutes. Roll out to a very thin sheet. Cover and let stand for 20 minutes. Roll dough up and out into thin slices, unroll and let dry well. Combine the meat, vegetables and seasonings. Add water to cover, bring to a boil. Add the noodles and cook until tender. Makes 4 servings.
