Baked Halibut RecipesFromScratch.com8/31/06

2 pounds of halibut
1 large onion, chopped
2 tablespoons of olive oil
one 1 pound 13 ounce can of tomatoes
1/2 cup of water
3 cloves
1/2 teaspoon of salt
freshly ground pepper
1 tablespoon of flour
1 tablespoon of water
12 green olives, pitted and sliced
1 tablespoon of chopped parsley
2 tablespoons of capers
1/4 cup of minced celery

Wash and dry fish. Brown the onion in olive oil. Add the tomatoes, 1/2 cup of water, cloves, salt and pepper. Cover and simmer for 20minutes. Mix the flour and tablespoon of water to a smooth paste and stir in. Cook for 5 minutes. Add olives, parsley, capers, and celery. Place the fish in a greased 3 - 4 quart casserole. Pour sauce over and bake at 375ºF. oven for 35 minutes, basting occasionally. Serves 4
