Beef Brisket & Onion Sauce RecipesFromScratch.com9/7/06

3 - 4 pound beef brisket
1 carrot, sliced
1 large onion, diced
salt and pepper
a few cloves
1 egg, slightly beaten
bread crumbs

Cover the brisket with boiling water, add carrot, onion, salt, pepper and cloves. Simmer for 3 hours or until tender. Remove from liquid; place in shallow baking dish. Spread egg over brisket, sprinkle with crumbs. Brown in hot oven. Serve with onion sauce.

Onion Sauce:

1/2 tablespoon of sugar
1 tablespoon of butter or margarine
2 onions, finely sliced
1 tablespoon of flour
1 cup of brisket broth
1 tablespoon of vinegar
salt

Brown the sugar in butter; add onions and cook until tender. Add flour, brown. Stir in broth, vinegar and salt. Cook until smooth and creamy. Put through strainer; serve with brisket. Makes 6 servings
