Chocolate Pound Cake

three 1 ounce squares of unsweetened chocolate
2 1/2 cups of sifted all purpose flour
3/4 teaspoon of cream of tartar
1/2 teaspoon of baking soda
1 1/2 teaspoon of salt
1 3/4 cups of sugar
1/2 pound of butter or margarine
2/3 cup of milk
1 teaspoon of vanilla
3 eggs and 1 extra yolk

Preheat oven to 350ºF. Grease bottom of 10 inch tube pan, line with waxed paper. Grease paper.
Melt chocolate over hot (not boiling) water. Sift flour, cream of tartar, soda, salt, and sugar together. Cream butter or margarine until soft. Beat in dry ingredients thoroughly until mixture is crumbly. Stir in milk and vanilla. Beat 300 strokes by hand, or 2 minutes at low speed in electric mixer. Add unbeaten eggs and extra yolk to batter. Beat 150 strikes, or 1 minute longer in mixer. Pour into prepared pan. Bake 60 -70 minutes or until cake tester comes out clean inserted near center of cake. Let cool in pan 15 minutes, then loosen sides carefully with spatula, invert pan on a cooling rack to remove cake, and let cool completely. Makes 10 or more servings
