Cold Chicken Yogurt Soup

1 cup of finely chopped cooked chicken ( I used leftover chicken from another meal)
1 teaspoon of lemon juice
3/4 teaspoon of minced fresh dill
1/2 teaspoon of salt
1/8 teaspoon of garlic powder
a pinch of white pepper
2cups of plain yogurt
1 small cucumber, seeded and diced
1/3 cup of chopped celery
3 tablespoons of thinly sliced green onions
Fresh dill sprigs for garnish, optional

Place the chicken, lemon juice, minced dill, salt, garlic powder and pepper in a small bowl, toss lightly. Cover, refrigerate for 30 minutes. Place the yogurt in a medium bowl. Stir with a fork or wire whisk until smooth and creamy. Stir in the chicken mixture, cucumber, celery and onions into yogurt. Pour soup into serving bowls, garnish with dill sprigs if desired. Makes 4 appetizer servings
