Favorite Spoon Bread
1 1 /2 teaspoons of sugar 1 1/2 teaspoons of salt 1 cup of cornmeal, sifted 1 1/3 cups of water, boiling (cool for 5 minutes) 1/4 cup of butter or margarine 3 eggs, lightly beaten 1 1/4 cups of milk 1 teaspoon of baking powder
Preheat oven to 350ºF. Mix together the sugar, salt and cornmeal. Pour water over meal mixture, stirring constantly. Mix in butter.
Let stand until cooled, add eggs, milk and baking powder, blending well. Pour into buttered pan. Place in shallow pan of hot water. Bake in a 350ºF. oven for 35 minutes or until crusty. Spoon out, serve.
