Fried Flounder & Hush Puppies

1 pound of flounder, thawed
1/2 cup of cornmeal
1 cup of flour divided
1 1/2 teaspoon of baking powder
1/2 teaspoon of cayenne pepper
1/2 teaspoon of salt
1/4 teaspoon of white pepper
1/4 teaspoon of oregano leaves
1 teaspoon of minced garlic
1 egg
3/4 cup of milk, divided
1 tablespoon of unsalted butter, melted
Vegetable oil for frying

Combine 3/4 cup of flour and all of the remaining dry ingredients. Mix together the egg and 1/2 cup of milk. Add to the dry mixture and blend. Add the melted butter and mix until well blended. Remove 1/2 of the batter and set aside. Add the remaining 1/4 cup of milk to half the batter, mix well. Coat the fish lightly in reserved flour then in batter mixture. sauté in vegetable oil for about 5 to 7 minutes each side or until golden brown. Cooking time will vary with the size of fillet. HUSH PUPPIES: In a medium saucepan, heat the vegetable oil to 350ºF. Using the reserved batter, drop spoonfuls of batter into the hot oil and deep fry for about 4 to 6 minutes or until golden brown. Serves 4
