Golden Coconut Peach Pie

4 1/2 cups of fresh peaches, sliced
1/2 cup of sugar
3 tablespoons of flour
1/4 teaspoon of nutmeg
1/8 teaspoon of nutmeg
1/8 teaspoon of salt
1/4 cup of orange juice
one 9 inch unbaked pie shell
2 tablespoons of butter
2 cups of flaked coconut
1/2 cup of evaporated milk
1 egg, beaten
1/4 - 1/2 cup of sugar
1/4 teaspoon of almond extract

 

Mix together the peaches, sugar, flour, nutmeg, salt, and orange juice; pour mixture into pie shell. Dot with butter, bake at 450ºF. for 15 minutes. Meanwhile, combine the coconut, milk, egg, sugar and almond extract. Pour over hot peach mixture. Reduce the heat to 350ºF. and bake until the coconut is toasted, about 30 minutes. Chill pie.
