Honey's Eggplant
1 medium eggplant
1 egg
1 1/2 cups of milk
2 cups of coarse bread crumbs
1/4 cup of melted oleo
salt and pepper
Peel and cut one medium eggplant into 3/4 inch cubes. Boil in salted
water for 10 minutes. drain well. In a mixing bowl beat egg until lemon
colored. Add milk, onion, bread crumbs, salt and white pepper, and
melted oleo. Add eggplant and mix thoroughly. Pour into buttered
casserole and top with buttered crumbs. Bake 35- 45 minutes at 350ºF.
