Herb Stuffed Ham Slices

4 tablespoons of butter or margarine
1 onion, finely chopped
10 mushrooms, finely chopped
1 1/4 teaspoons of prepared mustard
2 tablespoons of parsley, finely chopped
2 tablespoons of chives, finely chopped
1/4 teaspoon of ground sage
3/4 cup of herb bread crumbs
1/2 - 1 cup of chicken stock
salt and pepper to taste
6 large slices of cold boiled or baked ham, 1/4 - 1/2 inch thick

Heat half of the butter in a skillet; add onion and mushrooms; sauté for 5 minutes; remove to bowl. Add the rest of the ingredients with enough chicken stock to moisten the mixture and hold it together. Spread the prepared mixture on ham slices; fold slices in half; arrange on shallow, buttered baking dish. Melt the remaining butter; pour over ham slices. Cover and bake at 375ºF. for 20 minutes. Serves 6
