Italian Baked Bluefish

1 pound of bluefish or medium fat fish fillets
1/4 cup of dry red wine
2 tablespoons of chopped ripe olives
1 tablespoon of capers
4 anchovy fillets, drained and finely chopped
2 cloves garlic, crushed
One 28 ounce can of Italian plum tomatoes, drained and chopped

 

Preheat your oven to 350ºF. Cut the fish fillets into 4 serving pieces. Place on an ungreased baking dish, 8 x 8 x 2 inches. Mix the remaining ingredients, and pour over the fish. Bake uncovered about 40 minutes or until the fish flakes easily with a fork. Serves 4
