| Kansas City Beer Brisket Submitted by Wesley 3 - 4 pounds beef brisket 1 onion, sliced 1/4 cup of chili sauce 2 tablespoons of brown sugar 1 clove garlic, minced One 12 ounce can of beer 2 tablespoons of flour 1/2 cup of water Salt and pepper to taste |
| Trim any excess fat from the brisket and season with salt and pepper, place in a 9 x 13 inch baking dish, and cover it with the onion slices. In a bowl, combine the chili sauce, sugar, garlic, and beer, pour it over the meat and cover tightly with foil. Bake in a preheated 350ºF. oven for 3 1/2 hours. Uncover and bake for an additional 30 minutes, basting occasionally. Set the meat on a platter. Skim the excess fat from the liquid, measure the remaining liquid and add enough water to make 1 cup. Pour into the saucepan. Blend the flour and 1/2 cup of water, combine with the liquid and cook, stirring constantly over medium heat until it has thickened and becomes bubbly. Cut the meat across the grain and serve with beer gravy. Serves 8 - 10
