Lobster Newburg
1 cup of evaporated milk
2 ounces of Gruyere cheese, cubed
1 egg
1/2 teaspoon of bitters
1 cup of sliced mushrooms
2 tablespoons of chopped chives
18 ounces of cooked rock lobster, sliced
salt and pepper
Pour skim milk into saucepan. Gradually stir in cheese, egg, and
bitters. Stir in mushrooms and chives. Stir over low heat until
sauce thickens and bubbles. Stir in lobster. Season to taste
with salt and pepper. Heat until bubbly. Spoon lobster and sauce
over diet toast. Serves 4
