| | Liver Loaf Denmark 1 pound of calf or chicken livers 1 medium onion 1/4 cup of butter 1/4 cup of flour 1/2 cup of heavy cream 1/2 cup of chicken broth 1/4 pound of pork or beef fat, chopped 2 eggs 1 teaspoon of salt 1/2 teaspoon of pepper 5 anchovies or 2 tablespoons of anchovy paste |
| Place the raw liver and onion through a food chopped. In a large skillet melt the butter and blend in the flour. Pour in the cream and broth slowly while stirring, then add the chopped fat. When this mixture is thickened and smooth, add the rest of the ingredients. Blend all together. Grease a baking dish or loaf pan and pout the mixture into the prepared dish. Set this in a pan of hot water and bake it in a 350ºF. oven for 1 hour or more. If needed, add more water to the hot water bath. The liver is done when a testing knife comes out clean. Chill the loaf and serve as is, or slice it for smorgasbord sandwiches. Makes 8 servings
