Lobster Thermidor

4 lobster tails
1/2 cup of butter or margarine
1/2 cup of sliced mushrooms
1/4 teaspoon of paprika
1/4 teaspoon of dry mustard
1 tablespoon of lemon juice
2 tablespoons of grated cheese
1 tablespoon of parsley
1 1/2 cups of medium white sauce

Cook the lobster tails. Remove the meat from shells; cut into pieces. Cook the mushrooms in butter; add lobster and cook for 3 minutes. Add seasonings, lemon juice and white sauce. Place in greased baking dish; sprinkle with cheese. Bake at 400ºF. for 10 minutes or until the cheese is melted and browned. Makes 4 servings
