Meat Loaf Magnifique
1 1/2 pounds of ground beef
1 pound of bulk pork sausage
2 cups of raisin or white bread crumbs
1/2 cup of chopped mushrooms
1/4 cup of chopped parsley
1/2 cup of sour cream
1 egg, slightly beaten
1/3 cup of white wine
1/2 cup of sliced mushrooms
2 tablespoons of butter or margarine
1 cup of sliced mushrooms
one 10 1/2 ounce can of condensed cream of mushroom soup, undiluted
1/3 cup of white wine
2 pounds of new potatoes, cooked
Chopped parsley, for garnish
In a large bowl, combine beef, sausage, crumbs, chopped mushrooms,
parsley, sour cream, egg and 1/3 cup of the wine, blend thoroughly.
Place 1/2 cup of the sliced mushrooms in bottom of greased 8 cup ring
mold. Spoon meat mixture over mushrooms. Bake in 350ºF. oven for 1 hour.
About 10 minutes before meat loaf is done, melt butter in saucepan and
add 1 cup of sliced mushrooms. Cook, stirring until lightly browned.
Blend in soup and 1/3 cup of wine smoothly and heat, stirring
occasionally, until hot. Serve with meat loaf and potatoes. Garnish with
a little sprinkle of parsley. Makes 8 servings |
