Melon & Kiwi Salad
1/2 galia melon
2 kiwifruit
18 - 20 white seedless grapes
1 papaya, halved
3 tablespoons of orange flavored liqueur, such as cointreau
1 tablespoon of chopped lemon verbena, lemon balm or mint
sprigs of lemon verbena, or whole ground cherries, to decorate
Remove the seeds from the melon, cut it into 4 slices and carefully cut
away the skin. Cut the flesh into cubes and put into a bowl.
Peel the kiwifruit and cut across into slices. Add to the melon with the
white grapes.
Remove the seeds from the papaya and cut off the skin. Slice the flesh
thickly and cut into diagonal pieces. Add to the fruit bowl and mix
well.
Mix together the liqueur and the chopped lemon verbena, pour over the
fruit and let macerate for 1 hour, stirring occasionally.
Spoon the fruit salad into glasses, pour over the juices and then
decorate with lemon verbena sprigs or ground cherries. Serves 4 |
