Midwest Meatloaf

2 eggs, well beaten
3/4 cup of soft bread crumbs
1/2 cup of tomato juice
2 tablespoons of parsley
1/2 teaspoon of oregano
3 teaspoons of salt
1/4 teaspoon of pepper
1 small clove garlic, minced
2 pounds of ground beef
8 thin slices of boiled ham
1 1/2 cups of shredded mozzarella cheese
One 8 ounce package of sliced mozzarella cheese




Combine the eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic, mix with the beef. Using a large sheet of aluminum foil, place the beef mixture and flatten it out to q 10 x 12 inch rectangle. Arrange the ham on the meat mixture and sprinkle with shredded cheese. Starting at the short end of the meat, roll it up jelly roll style using the foil to lift the edges and ends. Place the meat loaf, seam side down, in a 9 x 13 inch pan. Bake for 1 1/4 hours at  350ºF. Before serving, place sliced mozzarella over the top to melt slightly. Makes 8 servings
