Mincemeat Pie 2

Pastry for 1 crust pie
One 9 ounce package of condensed mincemeat, broken up
1/2 cup of corn syrup
1/4 cup of margarine
3 eggs, slightly beaten
1/2 cup of coarsely chopped pecans, optional
1 tablespoon of grated orange rind
1/4 cup of dry sherry  

Preheat your oven to 350ºF. Roll out pastry, line a 9 inch pie pan with pastry. In a medium saucepan, combine the mincemeat, corn syrup, and margarine. Bring to a boil over medium heat, stirring constantly. Remove from heat. Add the eggs one at a time, mix well after each addition. Stir in pecans if desired and orange rind. Pour into pie pan. Bake pie for 40 to 50 minutes or until a knife inserted in center comes out clean. Remove from oven, pour sherry over filling. Cool before serving. Serves 8
