| | Orange Bluefish 2 large bluefish fillets, about 1 to 1 1/2 pounds each 1 cup of fresh orange juice 1 orange 1 red onion, sliced 2 tablespoons of honey |
| Preheat your oven to 350ºF. Arrange the fillets in a baking dish and pour the orange juice over them. Remove the zest from the orange and reserve. Cut the orange into slices and arrange them on top of the fish. Sprinkle with the zest, top with the onion sliced, and drizzle with honey. Bake, covered, for 10 minutes. Uncover, baste, and run under the broiler 4 inches from the heat source for an additional 5 - 6 minutes. If the fish is still not cooked through, turn off the oven, close the door, and allow to stand another several minutes, until the flesh flakes easily. Serves 6
