Poached Salmon with Ginger
1 salmon filet, about 1 pound
1 tablespoon of ginger root, grated
3 lemon slices
3 tablespoons of dry white wine
1 tablespoon of lemon juice
Set oven to 375ºF Place salmon filet on 2 layers of aluminum foil,
large enough to make a tent over the fish. Rub ginger into salmon, cover
with slices of lemon. Sprinkle wine and lemon juice over the fish. Fold
foil so that it makes a tent over fish; seal ends, too. Place on baking
sheet and bake for 20 minutes (longer if filet is thicker than 1 inch).
Carefully unfold the top of the foil. Transfer fish to serving platter.
Pour cooking juices over fish and serve. Serves 2.
