Pork Chop Casserole

One 6 ounce package of long grain and wild rice mix
2 cups of hot water
Six 1/2 inch thick bone in pork loin chops, trimmed
1/4 teaspoon of pepper
One 10 3/4 ounce can of condensed cream of celery soup, undiluted
1/2 cup of milk

 

Combine the rice, seasoning packet from rice mix, and hot water, place in a lightly greased 13 x 9 x 2 inch baking dish. Set aside. Sprinkle the pork chops with pepper and place over the rice mixture. Cover and bake at 350ºF. for 1 hour. Uncover the casserole, and combine the cream of celery soup and milk, and pour over the casserole. Bake the casserole, uncovered for 15 minutes or until heated through. Makes 6 servings

Tried & Tested: 10/15/02 Terry's Recipes- I made this using regular long grain rice and sprinkled the rice mixture with Mrs. Dash Seasoning. I didn't have time to buy the cream of celery, I used Cream of mushroom.  It was delicious!
