| Pita Quesadillas low calorie 1/2 cup of grated part skim mozzarella or low fat Monterey jack cheese 3 small jalapeno chiles, seeded and diced 2 tablespoons of chopped cilantro 1/4 teaspoon of ground cumin 2 tablespoons of pimiento, drained and diced 2 large whole wheat pita breads |
| In a small bowl, combine the grated cheese, diced chiles, cilantro, cumin, and pimiento. Using a sharp knife, slice open the pita breads along the edges, making 4 thin rounds of bread. Lay cut side up, on a parchment covered baking sheet and sprinkle with cheese mixture. Broil until bubbly. Cut each pita into 4 wedges. Serve hot. Makes 16 wedges
