Raspberry Bars
3/4 cup of margarine 1 cup of packed light brown sugar 1 3/4 cups of all purpose flour 1/2 teaspoon of baking soda 1/2 teaspoon of salt 1 1/2 cups of rolled oats one 18 ounce jar of raspberry jam
Ina large mixing bowl, cream margarine and brown sugar until smooth. In another bowl, sift together flour, baking soda, and salt. Gradually add dry ingredients to creamed mixture, mix until crumbly. stir in oats. Press half of the crumb mixture into a greased 13x9 inch baking pan. Spread with raspberry jam. Sprinkle remaining crumb mixture over the top, press lightly into jam. Bake at 400ºF. for 20 minutes or until lightly browned. Cool 5 minutes before cutting into bars. Makes 2 dozen
