Roasted Pork w/Rosemary & Garlic
2 tablespoons of olive oil
4 cloves garlic, peeled and halved
one 3 pound pork roast
2 tablespoons of minced, fresh rosemary
1/2 cup of dry white wine or water |
| Preheat oven to 350ºF. In a large ovenproof
skillet over medium high heat, heat olive oil and sauté garlic
for 2 minutes. Add pork roast to pan and brown lightly on all
sides. Add rosemary to pan. Insert meat thermometer into center
of the roast. Cover skillet and bake until temperature exceeds
175ºF. , 65 to 70 minutes. Remove roast to platter and keep warm
in the oven. Add the wine ( or water) to the skillet and place the skillet
over medium high heat on the stove. Scrape the pan to loosen the browned
bits in the skillet and blend with liquid. Cook rapidly for 2 to 3 minutes.
Pour sauce over pork and serve. Serves 6
