Ruth's Shrimp Delight

1 1/2 pound of shrimp
1/4 pound of butter
1 green pepper, chopped
1/2 cup of flour
1 cup of ripe tomatoes
4 hard boiled eggs, sliced
1 quart of milk, warmed
1/2 pound of Velveeta cheese
1/2 pound of sliced mushrooms, optional 

Cook the shrimp in boiling water with a little vinegar until they turn pink. Melt the butter and sauté green pepper in it. add flour and warm milk slowly, stirring constantly. When thickened, add tomatoes. Add cheese, stirring until melted. Add sliced hard boiled eggs, then stir in shrimp that has been shelled and deveined. Add mushrooms, if desired. Season to taste. Serve on toast or patty shells or waffles. Serves 8
