Poached Salmon w/Cucumber sauce
6 salmon steaks
1 quart of water
2 tablespoons of lemon juice
1 1/2 tablespoons of salt
In a large skillet heat water, salt, lemon juice to boiling.
Add salmon - simmer for 10 minutes. Remove fish with slotted spoon.
Spoon:
1/2 cup of sour cream
1 tablespoon of parsley
2 teaspoons of vinegar
1 unpared cucumber
1/4 cup of mayonnaise
2 teaspoons of grated onion
1/4 teaspoon of salt
Make cucumber sauce - shred whole cucumber to make 1 cup, add remaining
ingredients. Blend well. Chill. Serve hot salmon steaks with sauce and
lemon wedges on bed of lettuce.
Makes 6 servings. This sauce does not keep well. Use the same day that
you make. |
