Salmon Croquettes with Lemon Sauce

1 can of red or pink salmon
1 cup of mashed potato
1 egg, well beaten
Salt and pepper to taste

Mix above ingredients. Shape with croquetter or ice cream scoop. Roll in fine bread crumbs or cracker crumbs. Deep fat or bake at 350ºF. for 25 minutes.

LEMON SAUCE:
1 cup of lemon or orange juice
2 tablespoons of cornstarch diluted in 1/4 c. cold water

Bring all ingredients to a rolling boil in saucepan. Cook until sauce is clear. Serve hot over salmon croquettes.
