| | Sweet Potato Pie 2 sweet potatoes, 1 very large, 1 large 1/2 cup of butter, melted 1 cup plus 1 tablespoon of white sugar 1/2 cup of dark brown sugar 3 eggs 3/4 teaspoon of nutmeg 3/4 teaspoon of cinnamon 1/2 teaspoon of cloves 1 tablespoon plus 1 teaspoon pure vanilla extract 1/2 teaspoon of salt 1 cup of evaporated milk, undiluted 3 tablespoons of flour 3 unbaked pie crusts, two fitted into a 9 inch pie plate |

Cook potatoes in skins. Cool and peel. Add potatoes to butter in large bowl. Gradually mix in white sugar, then brown sugar. Beat in eggs, one at a time. Stir in nutmeg, cinnamon, cloves, vanilla, salt, milk and flour. Blend on medium speed of electric mixer until smooth. Pour into unbaked 9 inch double crust. You will probably have some leftover filling which you can bake separately like pudding in a small baking dish, for 40 minutes. It will have a cake like crust, on the bottom and sides. Bake in a preheated 400ºF. oven for 30 minutes. Cut third crust into strips, you may not need to use all of the third crust for strips. Place strips in a criss cross fashion over top of pie. Bake for another 15 to 20 minutes. Tried & Tested: I made this recipe following exact directions, which I never do! It was great, the extra sweet potatoes I used with dinner.
