| | Shaker Flank Steak One 1 1/2 pound beef flank steak 2 tablespoons of all purpose flour 2 tablespoons of butter or margarine 1 onion, finely chopped 1 stalk celery, finely chopped 1 carrot, finely chopped 1 small green pepper, finely chopped 1 tablespoon of lemon juice 1/2 teaspoon of salt 1/8 teaspoon of pepper 2 tablespoons of ketchup 1/2 cup of water |
| With a sharp knife, score both sides of steak to make diamond pattern. Rub flour into both sides of steak. In a 10 inch skillet over medium high heat, in hot butter, cook the steak until browned on both sides. Add the onion, celery, carrot and green pepper, sprinkle with lemon juice, salt and pepper. Combine the ketchup and water, pour over all. Heat to boiling. Reduce the heat to low. Cover, simmer about 1 1/2 hours or until the meat is fork tender. Serve meat with sauce. Makes 6 servings |
