Stuffed Tomato

4 large ripe tomatoes, trimmed and halved or 12 canned tomato wedges
1/2 onion, finely chopped
1 small clove garlic, minced
1/2 cup of cooked green spinach, egg free noodles
2 teaspoons of freshly grated Parmesan cheese

 

Remove some pulp from the halved tomatoes, heat halves slightly. Chop the pulp. Lightly simmer the onions, garlic, and the cooked green spinach noodles and pulp. Drain and heap into the tomato half, microwave for a few minutes and sprinkle on a small amount of grated Parmesan cheese. You can also brown the cheese by passing halves under a broiler. Serves 4
