Stuffed Rockfish

Four 1 pound rockfish
3 teaspoons of salt
2 tablespoons of cooking oil
4 cups of buttered bread crumbs
1/2 teaspoon of thyme
3 drops of hot sauce
1 package of onion soup mix
1 teaspoon of Worcestershire sauce

Cover the rockfish with water, then sprinkle with the salt. Soak for 20 minutes, then drain. Dry with paper towels. Rub inside and out with the oil. Combine the remaining ingredients and 3/4 cup of hot water and mix well. Stuff the rockfish with the crumb mixture, then place on foil and seal. Place in a shallow pan. Bake at 350ºF. for 1 hour. Open foil and baste rockfish with drippings. increase oven temperature at 450ºF. and bake until browned. Garnish with lemon slices.
