Scalloped Oysters 1 

2 dozen oysters

1/4 cup of butter
3 tablespoons of flour
1/2 teaspoon of salt
1/2 cup of bread crumbs

 

Drain the oysters, reserving liquor. Add enough milk to the liquor to make 1 1/2 cups. sauté the oysters in 3 tablespoons of the butter, over low heat, until the edges curl. Remove oysters and stir in flour and salt. Add milk and cook until thick, stirring constantly. Place the oysters in a buttered 1 1/2 quart casserole. Pour sauce over. Melt the remaining tablespoon of butter and mix well with crumbs. Top casserole with this. Bake at 350ºF. for 30 minutes. Serves 4
