Seafood Au Gratin

1/2 pound of mushrooms, sliced
1 whole shallot, chopped
6 tablespoons of butter
3/4 cup of heavy cream
1 egg yolk
1 tablespoon of brandy
1/2 pound of crab meat, cooked
1/2 cup of lobster meat, cooked
1/2 pound of large shrimp, cooked and peeled
1/4 cup of Parmesan cheese
salt, black pepper, and paprika, to taste

Set oven to 450ºF. In a medium skillet, sauté mushrooms and shallots in butter for 5 minutes. Beat egg yolk into cream and add to skillet slowly, stirring constantly. Remove from heat when thickened and stir in brandy. Season with salt, black pepper, and paprika, to taste. Place crab meat, lobster meat, and shrimp in a shallow, buttered casserole dish. Cover with the  mushroom-cream sauce and sprinkle with cheese. Bake for 10 minutes, then brown under broiler for 2 to 3 minutes. Serves 4.
