Shrimp Melissa
10 large fresh shrimp
1/2 teaspoon of garlic powder
2 tablespoons of flour
2 eggs, well beaten
salt, pepper to taste
Peel and devein shrimp. Dust them in the flour, then into beaten egg, to
which the salt, pepper and garlic powder have been added. Pour enough
cooking oil into a sauté or small frying pan to cover the bottom. when
the oil smokes, reduce heat and add shrimp. Cook the shrimp about 2
minutes on each side or until lightly browned. Remove, drain and blot
off the oil. wipe but do not wash the same sauté pan and use it to make
the sauce.
Sauce:
2 pimentos
3 ounces ( slightly less than 1/2 cup of milk)
1 teaspoon of flour
2 whole anchovies
1/2 teaspoon of garlic powder
salt, pepper to taste
1 teaspoon of butter
Melt, but not brown - butter over low heat. Add flour, stirring to keep
smooth, and milk ( do not scald). Mince anchovies and pimentos and add
to milk mixture, stirring as you do. arrange shrimp on plates and pour
the sauce over them. |
