Southern Cooked Peas
3 cups of shelled fresh green peas, cleaned, about 3 pounds
unshelled
1 cup of water
1/4 pound of salt pork
1/2 teaspoon of salt
2 tablespoons of butter, optional
Combine green peas, water, salt pork, and salt in a small Dutch
oven.
Bring to a boil; reduce heat.
Cover and simmer 25 minutes or until peas are tender.
Drain; add butter, if desired and toss lightly.
Yield: 6 servings
