Sugar Free Lemon Curd
1/2 cup of butter
1/2 cup of honey, warmed
4 tablespoons of grated lemon peel
juice of 3 lemons
6 eggs, lightly beaten
1/8 teaspoon of salt
In the top of a double boiler, combine all ingredients. Mix well. Set
over boiling water and stir/cook for 15 or 20 minutes or until thick and
smooth. Cool and store in a jar in refrigerator. Makes about 2 1/2 ups.
This may be used as a spread for toast, a filling for cakes or as a
dessert pudding. |
