| Thai Peanut Noodles
8 ounces of thin spaghetti 1/2 cup of unsalted peanuts 3 tablespoons of soy sauce 2 tablespoons of lemon juice 1 tablespoon of honey 3 tablespoons of water 1 tablespoon of vegetable oil 2 cloves garlic, chopped 1/2 cup of thinly sliced onion 1 cup of snow peas, cut into 1" lengths 3 cups of fresh bean sprouts 1/4 cup of thinly sliced green onions (green part only) |
| Cook spaghetti and drain. Chop peanuts (blender good). Combine soy sauce, lemon juice, honey and water. Heat oil in pan over medium heat. Add garlic and onions. Stir about 2 minutes, then add snow peas, bean sprouts and 1/2 the soy mixture. Cook about 3 minutes, stirring. Add remaining soy mixture along with chopped peanuts, green onions and drained pasta. Toss well and serve. 4 servings. |
