| Place the lemongrass, chile, garlic, and scallions in a food processor and process to a smooth paste. Add the mushrooms and process until very finely chopped. Add the ground pork, fish sauce and cilantro. Season to taste with salt and pepper, then divide the mixture into 4 equal portions, and shape with lightly floured hands into flat burger shapes. Heat the oil in a heavy skillet over medium heat. Add the burgers and cook for 6 to 8 minutes, until well cooked or as you like them. Meanwhile, mix the mayonnaise with the lime juice. Cut the baps in half and spread the lime flavored mayonnaise on the cut surfaces. Add a few shredded napa cabbage greens, top with a burger, and sandwich together. Serve immediately, while still hot.
