Tilapia Croquettes

Four 4 ounce tilapia fillets, thaw, if frozen
1 cup of tartar sauce, divided
2 tablespoons of fresh lime juice
1 teaspoon of grated lime peel
1/4 cup of butter or margarine, divided
1 1/4 cups of breadcrumbs
1 egg, lightly beaten
1 large clove garlic, minced
2 teaspoons of lemon pepper

 

Stir together the tartar sauce, lime juice and lime peel. Cook the fillets in a large nonstick skillet coated with 2 tablespoons of the butter 5 minutes on each side or until the fish flakes with a fork. Flake fish fillets and place in large bowl. Add 1/3 cup of the tartar sauce mixture, breadcrumbs, egg, garlic and lemon pepper, stirring gently to combine ingredients. Shape into 8 patties. Cook the patties in batches in remaining 2 tablespoons butter in a large nonstick skillet over medium high heat for 5 minutes on each side or until golden brown. Serve immediately with remaining tartar sauce mixture and coleslaw if desired. Serves 6
