Veal Parmigiana

1 1/2 pounds of veal, thinly sliced
3 tablespoons of vegetable oil
1/2 cup of chopped onion
Two 8 ounce cans of tomato sauce
1/4 teaspoon of crushed basil leaves
1/2 teaspoon of oregano
1/4 teaspoon of thyme
1/2 pound of sliced mozzarella cheese
1/4 cup of grated Parmesan cheese

Over medium heat, brown veal lightly on both sides in the hot oil. Remove the meat to a shallow 2 quart buttered dish. Add more oil as needed. Add onion and sauté until tender. Stir in tomato sauce, basil, oregano and thyme. Remove from heat. Pour sauce over veal and top with mozzarella and Parmesan cheese. Bake in a 350ºF. oven for 40 minutes or until browned and tender. Serves 6
