Warm Banana Mousse

3 eggs
1 cup of sugar
1/2 cup of light cream, warmed to room temperature
1 teaspoon of vanilla extract
3 ripe bananas, mashed
1 1/2 cups of heavy cream, stiffly beaten
Vanilla wafers

 

In the top of a double broiler over hot water, not boiling, beat the eggs and sugar until frothy and pale yellow. Beat in light cream and vanilla. Beat in bananas. Allow the mixture to cool slightly and serve with whipped cream and vanilla wafers. Makes 8 to 12 servings
