Wilted Spinach Salad

12 ounces of fresh spinach
6 radishes, sliced
6 green onions, sliced
2 slices of cooked bacon, reserve drippings
2 hard-cooked eggs
1 1/2 tablespoon of sugar
3 tablespoons of  vinegar
1 tablespoon of  water
1/2 teaspoon of salt
1/8 teaspoon of pepper

 

Wash the spinach and tear into bite sized pieces. Add onions and radishes. Refrigerate, covered. Peel and slice the eggs. Add the remaining ingredients to the bacon drippings. Place all of the ingredients minus the spinach, egg, and bacon into your microwave. Cook on high,  uncovered for  45 - 60 seconds or until the mixture boils. Pour over the spinach in a salad bowl,  toss lightly. Top with the sliced egg and crumbled bacon. A delicate dressing that flavors the salad as it wilts fresh greens.
