Walnut Coffee Cake

1/2 cup of margarine or butter
1 1/2 cup of sugar
2 eggs
1 teaspoon of vanilla
1 cup of sour cream
2 cups of sifted flour
1 1/2 teaspoon of baking powder
1 teaspoon of soda
1/4 teaspoon of salt
1 cup of chopped walnuts
1 teaspoon of cinnamon
1 1/2 cups of seedless raisins

 

Cream the butter and 1 cup of sugar in a bowl until fluffy. add the eggs and vanilla and beat well. Blend in the sour cream. Sift the flour, baking powder, soda and salt together and stir into creamed mixture. Spread half of the batter in a greased 9 inch square pan. Mix the walnuts, remaining sugar and cinnamon and sprinkle half the mixture over batter. Sprinkle with raisins. add the remaining batter and top with remaining walnut mixture. Bake at 350ºF. for 40 minutes. Cut into squares and serve warm. Makes 9 servings
