| Peel and cut the rind into 1 1/2 inch pieces, then soak overnight in a mixture of lime and water. Wash several times, then place in a large cooking pot. Cover with water and cook until tender, then drain. Mix the sugar, vinegar and cinnamon and bring to a boil. Cool. Pour over the rind and let stand overnight. Bring to a boil and boil until the rind is transparent. Pack the rind into hot sterilized jars, then fill with hot syrup. Seal the jars. Makes 4 quarts
