Whoopee Whipped Cream

2/3 cup of evaporated skim milk
2 teaspoons of unflavored gelatin
2 tablespoons of cool water
1/4 cup of boiling water
2 tablespoons of fructose
1 teaspoon of vanilla extract

Place the skim milk in a bowl in the freezer for about 30 minute. Place the gelatin in the 2 tablespoons of cool water to soften. Add the boiling water and stir until the gelatin is completely dissolved and set aside. Beat the skim milk until very thick. Combine the fructose and vanilla with the milk and add the gelatin mixture gradually, beating until the mixture forms soft peaks. Serve immediately. Makes 4 cups
